Have a delicious Christmas – Part Two: Lazy Days

I know, I know, it’s Christmas and you don’t want to get up off the sofa for anything, in case you get cold, or you get your onesie in a tangle, or in case McFly come on the TV and you miss it…

But you still have to eat. So here’s a Christmas toastie you can whip up in no time.


Walnut, Rocket and Blue Cheese Toastie

The key to this is being courageous with your ingredients. You don’t have to use the exact same components as I have, but bold flavours such as a blue cheese or the peppery kick of the rocket make this sandwich a perfect indulgence – even for the laziest of chefs!

IMG_0031IMG_0035Simply combine your ingredients within the classic sandwich paradigm, taking care to butter both sides of each slice of bread if you are going to be using a toastie machine. Make sure the sandwiches are filled right to the edges, because there is literally nothing worse than empty bits of crust. Booo. (Kinda playing it fast and loose with the term ‘literally’ there, but what can you do?)

Toast well. This is the most important step. You want the cheese to be gooey, the rocket will wilt, and the bread needs to be crunchy, not soggy! Maybe while you’re waiting you could whip up this cocktail from last week (unless it’s a breakfast toastie, in which case, well, maybe just don’t tell anyone 😉 )
